  • 8 oz whole wheat spaghetti
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced

  • 1 bell pepper, thinly sliced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved

Instructions

Instructions
  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until fragrant and translucent, about 3 minutes. Stir in minced garlic and cook for 1 minute.

  3. Add the sliced bell pepper and diced zucchini to the skillet. Cook for another 4 minutes until the vegetables are tender but still crisp.

  4. Stir in the cherry tomatoes and cook for an additional 2 minutes until they start to soften.

  6. Add the cooked pasta to the skillet and toss until well coated with the sauce and vegetables. Cook for an additional 2 minutes to heat through.

  7. Remove from heat and transfer the pasta to serving plates. Garnish with fresh basil leaves. Serve hot and enjoy.
