BBQ Chicken Quinoa Bowl

Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 1/2 cup Cherry Smoked BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • 2 cups cooked quinoa
  • 1 cup diced bell peppers (any color)
  • 1 cup cooked black beans, rinsed and drained
  • 1 avocado, diced
  • 1/4 cup diced red onion
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving

  1. In a mixing bowl, combine the diced chicken breasts with Cherry Smoked BBQ sauce, minced garlic, salt, and pepper. Let marinate for at least 30 minutes in the refrigerator.

  2. Heat olive oil in a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes, stirring occasionally.

  3. In a serving bowl, assemble the quinoa bowl by layering cooked quinoa, diced bell peppers, cooked black beans, diced avocado, and diced red onion.

  4. Top the quinoa bowl with the cooked BBQ chicken.

  5. Garnish with fresh cilantro leaves and serve with lime wedges on the side.

  6. Drizzle extra Cherry Smoked BBQ sauce over the bowl if desired.

  7. Toss everything together before eating to combine all the flavors.
