Ingredients

  • 1/4 cup coconut flour
  • 1 cup blanched almond flour
  • 1/3 cup unsweetened almond milk
  • 2 large eggs
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup fresh blueberries, for serving

    4 tablespoons honey

  2. 2 tablespoons freshly squeezed lemon juice

  3. 2 tablespoons Taste Flavor Co. Mango Habanero Sauce

  4. Directions:

    In a large bowl, whisk together coconut flour, almond flour, almond milk, eggs, oil, baking powder, vanilla, and salt until smooth.

  5. Heat a skillet over medium heat and lightly grease with olive oil.

  6. Drop about 3 tablespoons of batter into the pan for each pancake and cook for about 2 minutes per side, or until lightly browned.

  7. In a small bowl, whisk together honey, lemon juice, and mango habanero sauce to make the drizzle.

  8. Serve pancakes topped with fresh blueberries and a generous drizzle of the sweet and spicy honey-lemon sauce.
