Ingredients

  • 4 large whole-wheat tortillas
  • 4 free-range eggs (or egg whites for lower fat)
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green onion
  • 2 avocados, sliced

  • 1/4 cup shredded low-fat cheddar cheese 
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

  2. Lightly warm the tortillas.

  3. Layer eggs, avocado slices, cheddar cheese, and green onion on the tortillas.
