BBQ Veggie Egg Muffins

Ingredients

  • 6 large eggs
  • 1/4 cup Cherry Smoked BBQ sauce
  • 1/4 cup diced bell peppers
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped spinach
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with silicone muffin liners.

  2. In a large mixing bowl, whisk together the eggs and Cherry Smoked BBQ sauce until well combined.

  3. Stir in the diced bell peppers, red onion, tomatoes, chopped spinach, salt, and pepper.

  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

  5. Bake in the preheated oven for 25 minutes, or until the egg muffins are set and lightly golden on top.

  6. Remove from the oven and let cool slightly before serving.
