Ingredients

  • 1/2 cup chickpea flour
  • 1/2 cup milk 
  • 1 free-range egg
  • 2 tablespoons Sesame Ginger Teriyaki Sauce
  • 2 tablespoons chopped green onion
  • 2 tablespoons extra-virgin olive oil
  • Filling: 1 cup fresh spinach, 1/4 cup shredded carrots

  1. In a bowl, whisk together chickpea flour, milk, egg, and 1 tablespoon of the Sesame Ginger Teriyaki Sauce until smooth. Stir in green onion.

  2. Heat a non-stick skillet over medium heat with a little olive oil.

  3. Pour 1/4 of the batter into the skillet, swirling to form a thin crepe. Cook for 2 minutes per side. Repeat to make 4 pancakes.

  4. Sauté spinach and carrots until wilted. 

  5. Divide the filling among the pancakes, roll them up, and drizzle with the remaining sauce.
