Heat half of the olive oil in a skillet and cook chicken until golden.

Transfer to a plate and set aside.

Heat the remaining oil in the same skillet and sauté red onion for about 3 minutes or until fragrant; stir in garlic for 1 minute and then add in the tomato paste. Cook for a minute and then add in corn and the beans and tomatoes. Cook for about 3 minutes or until cooked through.

In bowls, layer brown rice, beans and corn mix, and chicken.

Top with slices of avocado and drizzle sauce over each.
