Spiced Chicken, Rice & Avocado Lunch Bowl

Ingredients

  • 2 chicken breasts, diced
  • 4 cups cooked brown rice
  • 3 tablespoons extra-virgin olive oil
  • 1/2 cup chopped red onion
  • 4 cloves garlic, minced 
  • 1 cup tomato paste 
  • 1/4 cup diced tomatoes
  • 1/2 cup corn
  • 1/2 cup black beans
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper 
  • 4 tablespoons Taste Flavor Co. Fiery Mango Habanero Sauce
  • 1 avocado, sliced 

Instructions

Instructions
  1. Heat half of the olive oil in a skillet and cook chicken until golden.

  2. Transfer to a plate and set aside.

  3. Heat the remaining oil in the same skillet and sauté red onion for about 3 minutes or until fragrant; stir in garlic for 1 minute and then add in the tomato paste. Cook for a minute and then add in corn and the beans and tomatoes. Cook for about 3 minutes or until cooked through. 

  4. In bowls, layer brown rice, beans and corn mix, and chicken.

  5. Top with slices of avocado and drizzle sauce over each.

  6. Garnish with fresh herbs and serve.
