Ingredients

  • 1 cup cooked brown rice, warmed
  • 4 large eggs, scrambled
  • 1/2 cup corn kernels, drained 
  • 1/2 cup black beans, rinsed and warmed
  • 1/4 cup diced tomatoes
  • 1 avocado, sliced
  • ½ red onion, chopped 
  • 2 tablespoons shredded parmesan cheese
  • 3 tablespoons Southwest Ranch Sauce
  • 1 tablespoon chopped cilantro

Instructions

  1. Divide the warm rice between two bowls.

  2. Top each bowl evenly with corn, black beans, red onion, and tomato. 

  3. Place two cooked eggs on top of each bowl and arrange the avocado slices alongside.

  4. Sprinkle cheese and drizzle with Southwest Ranch Sauce.

  5. Garnish with fresh cilantro and enjoy!
