Instructions

In a large pot, heat olive oil over medium heat. Sauté red onion for about 4 minutes or until fragrant.

Stir in carrots, and celery for 5 minutes.

Add diced chicken and cook until no longer pink on the outside.

Add broth, grated ginger, and sauce.

Bring to a boil, then reduce heat and simmer for 15 minutes.

Stir in spinach and lime juice for about 2 minutes or until spinach is wilted.

Serve over cooked brown rice
