Healing Lime & Sesame Ginger Chicken Stew

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 pound chicken breast, diced
  • 1 red onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups low-sodium chicken broth
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons Sesame Ginger Teriyaki Sauce
  • 2 cups fresh spinach
  • 1 lime, juiced
  • 4 cups cooked brown rice

  1. In a large pot, heat olive oil over medium heat. Sauté red onion for about 4 minutes or until fragrant. 

  2. Stir in carrots, and celery for 5 minutes.

  3. Add diced chicken and cook until no longer pink on the outside.

  4. Add broth, grated ginger, and sauce. 

  5. Bring to a boil, then reduce heat and simmer for 15 minutes.

  6. Stir in spinach and lime juice for about 2 minutes or until spinach is wilted.

  7. Serve over cooked brown rice
