Healthy BBQ Beef Lettuce Cups

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup Cherry Smoked BBQ sauce
  • 1 tablespoon extra-virgin olive oil
  • 1 red onion, chopped 
  • 1 teaspoon minced garlic
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper 
  • Iceberg lettuce leaves for cups
  • 2 avocados, diced
  • 2 tomatoes, diced 

Instructions

Instructions
  1. Heat olive oil in a skillet over medium-high heat. Cook red onions for 4 minutes or until fragrant. Add minced garlic and cook for 1 minute until fragrant.

  2. Add lean ground beef to the skillet and cook until browned and cooked through, breaking it apart with a spoon, about 8 minutes.

  3. Stir in the Cherry Smoked BBQ sauce and cook for an additional 2 minutes, until the beef is coated and heated through.

  4. Season with salt and pepper to taste.

  5. Spoon the BBQ beef mixture into iceberg lettuce cups.

  6. Top with diced avocado and diced tomatoes. 

  7. Serve immediately.
