In a bowl, whisk eggs, green onion, milk, salt, and pepper until combined.

In a bowl, whisk eggs, green onion, milk, salt, and pepper until combined.

Add red onion and bell pepper and sauté for 2–3 minutes.

Add spinach and cook until wilted. Remove veggies from skillet and set aside.

Pour egg mixture into the skillet and cook undisturbed for 2 minutes.

Add sautéed vegetables, tomatoes, and cheese on one half. Drizzle with 1 tablespoon mango habanero sauce.

Fold the omelette over and cook for another 2 minutes until set.

Slice and serve with the remaining sauce on the side.
