Pasta with Lemony Toasted Nut & Avocado Pesto

Ingredients

  • 8 oz pasta 
  • 1 cup fresh basil leaves
  • 1/4 cup toasted cashews
  • 1/4 cup toasted almonds 
  • 1 avocado 
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoon fresh lemon juice 
  • 2 tablespoons Cherry Smoked BBQ sauce 
  • 2 cloves garlic
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper 
  • Cherry tomatoes (for garnish)

Instructions

Instructions
  1. Follow cooking instructions to cook pasta until tender.

  2. In a blender, combine basil leaves, pine nuts, garlic, avocado, olive oil, fresh lemon juice, sea salt, and pepper. 

  3. Blend until very smooth. 

  4. Toss the pasta with the pesto until evenly coated.

  5. Garnish with halved cherry tomatoes and serve as a light and nutritious starter to aid in weight loss.
