Heat olive oil in a large skillet over medium heat. Add sweet potato and red onion, and cook for 15 minutes, stirring occasionally, until potatoes are tender and browned.

Create two wells in the hash and crack an egg into each. Cover the skillet and cook for 5 minutes, until egg whites are set.
