Sesame Ginger Sweet Potato & Kale Hash

Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup diced red onion
  • 2 cups kale, stems removed and chopped
  • 2 large eggs
  • 2 tbsp Sesame Ginger Teriyaki Sauce
  • 1 tsp sesame seeds

  1. Heat olive oil in a large skillet over medium heat. Add sweet potato and red onion, and cook for 15 minutes, stirring occasionally, until potatoes are tender and browned.

  2. Add kale and cook for 3 minutes until wilted.

  3. Create two wells in the hash and crack an egg into each. Cover the skillet and cook for 5 minutes, until egg whites are set.

  4. Drizzle with Sesame Ginger Teriyaki Sauce and sprinkle with sesame seeds before serving.
