Southwest Ranch Shrimp & Veggie Stir-Fry

Ingredients

  • 10 oz shrimp, peeled and deveined
  • 1 tablespoon extra-virgin olive oil
  • 1 red onion, diced 
  • 1 cup chopped bell peppers (mixed colors)
  • 1/2 cup sliced zucchini
  • 1/4 cup red onion, sliced
  • 2 tablespoons Southwest Ranch Sauce
  • 1/2 cup cooked brown rice 

Instructions

  1. Heat olive oil in a skillet or wok over medium heat.

  2. Add shrimp and cook until pink, about 3 minutes.

  3. Add red onion and sauté for 4 minutes.

  4. Add vegetables and stir-fry for another 5 minutes.

  5. Drizzle with Southwest Ranch Sauce and toss to coat evenly.

  6. Serve over rice.
