Spicy Black Bean & Avocado Flatbread Pizza

Ingredients

  • 2 whole-wheat flatbreads or naan
  • 1/4 cup Southwest Ranch Sauce
  • 1/2 cup black beans, rinsed and mashed slightly
  • 1/4 cup corn kernels
  • 1/4 cup shredded Monterey Jack cheese
  • 1/2 avocado, thinly sliced
  • 1 tablespoon pickled jalapeños
  • 1 tablespoon fresh cilantro, chopped
  • Squeeze of lime juice

Instructions

  1. Preheat oven or toaster oven to 400°F.

  2. Place flatbreads on a baking sheet. Spread a layer of Southwest Ranch Sauce on each.

  3. Top with mashed black beans, corn, and cheese.

  4. Bake for 8-10 minutes until the edges are crispy and cheese is melted.

  5. Remove from oven and immediately top with avocado slices, pickled jalapeños, and cilantro. Finish with a squeeze of lime juice. Slice and serve.
