Instructions

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Heat olive oil in a large skillet over medium heat.

Add minced garlic and diced onion to the skillet. Cook until onions are translucent.

Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.

Stir in diced vegetables and cook for an additional 5-7 minutes until vegetables are tender.

Pour Spicy Garlic Parmesan sauce over the beef and vegetable mixture. Stir to coat evenly.

Season with salt and pepper to taste.

Transfer the beef and vegetable mixture to the prepared baking dish.

Spread cooked quinoa or brown rice evenly over the top.

If desired, sprinkle shredded mozzarella cheese on top.
