Ingredients

  • 1 pound ground turkey
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup diced shiitake mushrooms
  • 1/4 cup toasted cashew nuts 
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon chili flakes (optional)
  • 3 tablespoons Sesame Ginger Teriyaki Sauce
  • 1 head bibb or butter lettuce, leaves separated
  • Garnish: chopped green onion, toasted sesame seeds

  1. Heat oil in a skillet over medium-high heat. Cook turkey until no longer pink.

  2. Add mushrooms, cashew nuts, and ginger; cook for 4 minutes until mushrooms are soft.

  3. Stir in chili flakes (if using) and sauce. Cook for 1 more minute.

  4. Spoon mixture into lettuce leaves. Top with green onion and sesame seeds and fold into wraps. Enjoy!
