Spicy Lentil & Sweet Potato Stew

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 red onion, diced
  • 2 garlic cloves, minced
  • 1 cup diced sweet potato
  • 1/2 cup red lentils
  • 2 cups low-sodium vegetable broth
  • 1/4 cup Taste Flavor Co. Mango Habanero Sauce
  • 1 teaspoon cumin
  • ¼ teaspoon sea salt 
  • ¼ teaspoon black pepper

  1. Heat olive oil in a pot over medium heat. Sauté onion and garlic until translucent.

  2. Add sweet potato, lentils, broth, mango habanero sauce, cumin, salt, and pepper.

  3. Bring to a boil, then reduce to a simmer and cook for about 30 minutes until lentils and sweet potatoes are soft.

  4. Adjust seasoning and serve hot.
