Ingredients

For Patties:

  • 8 oz ground chicken breast
  • 2 tablespoons finely chopped red bell pepper
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

For Mango Slaw:

  • 1/2 cup shredded green cabbage
  • 1/4 cup diced fresh mango
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon fresh lime juice
  • 1 teaspoon Sesame Ginger Teriyaki Sauce

To Assemble:

  • 3 tablespoons Sesame Ginger Teriyaki Sauce, divided
  • 2 whole grain buns, toasted
  • 1 tablespoon chopped roasted peanuts

  1. In a bowl, gently combine all patty ingredients. Form into two patties.

  2. In a separate bowl, toss together all the mango slaw ingredients. Set aside.

  3. Heat a skillet over medium heat. Cook chicken patties for 5 minutes per side, until cooked through.

  4. Brush the patties with 2 tablespoons of the Sesame Ginger Teriyaki Sauce in the last minute of cooking.

  5. To assemble, place a patty on the bottom bun. Top with a generous pile of the mango slaw. Drizzle the remaining 1 tablespoon of sauce over the slaw, sprinkle with chopped peanuts, and add the top bun.
