In a blender, blend together all the sauce ingredients until very smooth. Refrigerate until ready to use.

Mix together ground turkey, cayenne pepper, sage, ginger, salt and pepper in a bowl until well blended.

Form patties from the mixture and place on a plate.

Heat olive oil in a skillet over medium high heat and fry the patties for about 8 minutes per side or until no longer pink in the inside and browned on the outside.

Serve the turkey patties with green salad drizzled with lemon tahini.
