Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrot
  • 4 cloves garlic, minced
  • 1 cup lentils, rinsed
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon cumin
  • 3 tablespoons Southwest Ranch Sauce
  • Fresh parsley for garnish

  1. In a large pot, heat olive oil over medium heat. Add onion, celery, and carrot and cook for 7 minutes until softened. 

  2. Add garlic and cook for 1 more minute.

  3. Add lentils, vegetable broth, diced tomatoes, and cumin. Bring to a boil.

  4. Reduce heat, cover, and simmer for 30 minutes, until lentils are tender.

  5. Stir in the Southwest Ranch Sauce. Season with salt and pepper to taste

  6. Ladle into bowls and garnish with fresh parsley.
