Instructions

In a large pot, heat olive oil over medium heat. Add onion, celery, and carrot and cook for 7 minutes until softened.

Add garlic and cook for 1 more minute.

Add lentils, vegetable broth, diced tomatoes, and cumin. Bring to a boil.

Reduce heat, cover, and simmer for 30 minutes, until lentils are tender.

Stir in the Southwest Ranch Sauce. Season with salt and pepper to taste

Ladle into bowls and garnish with fresh parsley.
