Ingredients

  • 4 eggs, beaten
  • 1 red onion, diced
  • 1 eggplant, diced 
  • 1/2 cup diced bell peppers (mixed colors)
  • 1/4 cup shredded cheese
  • 2 tablespoons Southwest Ranch Sauce
  • 2 tablespoons extra-virgin olive oil
  • 2 whole-wheat wraps

  1. Heat olive oil and sauté red onion until soft. Add in red bell peppers and eggplant and cook for about 4 minutes or until soft. 

  2. Pour in eggs, cook, and fold into a fluffy omelet.

  3. Slice the omelet in half, place each portion on a wrap, and top with cheese.

  4. Drizzle with Southwest Ranch Sauce, roll up, and serve.
