One-Pan Southwest Ranch Chicken & Rice

Ingredients

  • 2 boneless, skinless chicken thighs or breasts (6 oz each)
  • 1 teaspoon taco seasoning
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup long-grain white rice, uncooked
  • 1 1/4 cups low-sodium chicken broth
  • 1/2 cup black beans, rinsed
  • 1/4 cup corn kernels
  • 3 tablespoons Southwest Ranch Sauce
  • Fresh cilantro, chopped

  1. Season chicken with taco seasoning. Heat olive oil in a skillet over medium-high heat. 

  2. Sear chicken for 3 minutes per side until golden. Remove and set aside.

  3. In the same skillet, add the rice and chicken broth, scraping up any browned bits. Bring to a simmer.

  4. Stir in black beans and corn. Place the seared chicken on top.

  5. Cover, reduce heat to low, and cook for 20 minutes, or until rice is tender and liquid is absorbed.

  6. Drizzle with Southwest Ranch Sauce and garnish with cilantro before serving.
