Ingredients

  • 2 cups diced potatoes 
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 4 large eggs
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tablespoons Southwest Ranch Sauce
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

  1. Heat olive oil in a cast-iron or non-stick skillet over medium-high heat. Add potatoes, onion, and bell pepper.

  2. Cook, stirring occasionally, for 20 minutes until potatoes are crispy and cooked through. Season with salt and pepper.

  3. Create 4 small wells in the potato mixture. Crack an egg into each well.

  4. Cover the skillet and cook for 7 minutes, or until the egg whites are set but the yolks are still runny.

  5. Remove from heat. Drizzle with Southwest Ranch Sauce and sprinkle with cheese.

  6. Let sit for a minute for the cheese to melt, then serve directly from the skillet.
