Instructions

Heat olive oil in a cast-iron or non-stick skillet over medium-high heat. Add potatoes, onion, and bell pepper.

Cook, stirring occasionally, for 20 minutes until potatoes are crispy and cooked through. Season with salt and pepper.

Create 4 small wells in the potato mixture. Crack an egg into each well.

Cover the skillet and cook for 7 minutes, or until the egg whites are set but the yolks are still runny.

Remove from heat. Drizzle with Southwest Ranch Sauce and sprinkle with cheese.

Let sit for a minute for the cheese to melt, then serve directly from the skillet.
