Sesame Ginger Chicken Scramble

Ingredients

  • 1/2 pound chicken
  • 4 free-range eggs
  • 2 tablespoons extra-virgin olive oil
  • 1 red onion, chopped
  • 4 garlic cloves, minced 
  • 1/4 cup diced red bell pepper
  • 4 tablespoons Sesame Ginger Teriyaki Sauce
  • 2 tablespoons chopped chives
  • 1 teaspoon toasted sesame seeds

  1. Heat half of the olive oil in a skillet over medium heat, cook in the chicken until golden brown. Transfer to a plate.

  2. Heat the remaining oil in the same skillet and sauté red onions for about 4 minutes or until fragrant; stir in garlic for 1 minute.

  3. Add in the red bell pepper and cook for about 2 minutes. 

  4. Return the chicken to the skillet and beat in the eggs.

  5. Cook, stirring, for about 2 minutes or until the eggs are set.

  6. Stir in the Sesame Ginger Teriyaki Sauce and cook for 1 more minute.

  7. Garnish with chives and toasted sesame seeds before serving.
