Southwest Ranch Shrimp & Avocado Salad

Ingredients

  • 8 oz raw large shrimp, peeled and deveined
  • 1 teaspoon chili powder
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/2 avocado, diced
  • 1/4 cup crumbled feta cheese (optional)
  • 3 tablespoons Southwest Ranch Sauce
  • 1 tablespoon freshly squeezed lime juice

  1. Toss shrimp with chili powder. Cook in a non-stick skillet over medium-high heat for 2-3 minutes per side until pink and opaque. Set aside.

  2. Divide the mixed greens between two plates. Top with cherry tomatoes, cucumber, and diced avocado.

  3. Arrange the cooked shrimp on top of the salads and sprinkle with cotija cheese, if using.

  4. Whisk together the Southwest Ranch Sauce and lime juice. Drizzle over the salads and serve.
