Ingredients

  • 2 large whole-wheat tortillas
  • 1/2 cup cooked lean ground chicken
  • 1 red onion, finely chopped
  • 2 free-range eggs, whisked
  • 1/4 cup black beans
  • 1/4 cup diced tomatoes
  • 2 tablespoons Southwest Ranch Sauce
  • 1/4 cup shredded reduced-fat cheddar
  • 1 tablespoon extra-virgin olive oil
  • Fresh lettuce

  1. Heat olive oil in a skillet over medium heat and cook chicken until golden browned; add in red onion and stir for about 2 minutes or until fragrant. 

  2. Add beans and tomatoes, stir to warm through.

  3. Add eggs and scramble until set.

  4. Spoon mixture into tortillas, top with cheese, and drizzle with Southwest Ranch Sauce.

  5. Roll tightly and serve warm (or wrap for meal prep).
